My beautiful Grandma Dolan
I was just thinking this morning about the history of fudge and it dawned on me that maybe you would like to know where I learned to cook and why I love it so much! As if the history alone about “fudge” wasn’t enough to make you all want to run out and try it! I was born and raised in TN. When you are from TN, you grow up around a strong southern heritage of FOOD in general. I remember being amazed at how my Papa Whitten could make biscuits and EVERY TIME they were made to perfection..but even more that I didn’t typically care for biscuits but I LOVED his! My Grandma Dolan made the absolute BEST homemade stews and Chicken and Dumplings of the south ( I am pretty certain)! My Dad was always the grill master…he could take meat and make it better than a 5 star restaurant every time! My Mom ALWAYS made ( and still makes) gigantic Thanksgiving meals and her desserts were and are always above and beyond delicious! Actually, the very first fudge I ever had…was my Mothers. I do love my Mom’s as well..she makes a very “Traditional” fudge. She started my love for the confectionery without a doubt! Also, my parents both worked and from an early age I was cooking…. I learned most of my cooking over telephone! My Mom would set aside all I needed and then at about 4p.m. would call and teach me as I went along how to cook it! When they came home, dinner was ready! Pretty soon I was able to do it without the added assistance. The one thing about me…if I go by a recipe, it is never going to be what that recipe intended it to be…I ALWAYS think…hmmm..I will add this too and that! I make it my own. I change it and put a spin to it that may make it an entirely different dish! It seems to work for me…I have made my most successful meals this way! As I got older, I became fascinated with the act of “creating” something “different”.. That is what I did with our fudge.I wanted something that you could walk in and just get anywhere. I wanted something that had a unique quality about it! How lucky am I to have a family of really great cooks?! If it weren’t for that aroma of biscuits in the morning when visiting my Papa, being the sampler to my Grandmas soups……or having a Mother that made(and makes) the best variety of desserts of anyone I have ever known… (She is also why I cook “military”style…enough to feed a small army)…I wouldn’t be here today launching a business that I hope becomes a household name for you and yours one day!

Good Morning to everyone! Last night we filmed at the restaurant “Joeys on the beach 2“ again and took some awesome pictures of our fudge! I also got to have some Ironman triathletes try my fudge..they really liked it and kept eating it! I sent the tray home with them…anyone that can do what those guys do ….can have plenty of my fudge! Good luck ,by the way, to all of the Ironmen this weekend here in Panama City beach! “Carter Chocolatier” has been providing samples all week at Joeys for everyone to try! The feedback has been great! Our #1 comment? That our fudge is not TOO sweet, you can eat more and more! (WE LOVE THAT)I did post a warning label at our stand..WARNING: HIGHLY ADDICTIVE”!

“Carter Chocolatier” is wanting to know what YOUR FAVORITE flavor fudge is! We are working on finalizing our “everyday” menu. Of course we will always offer “Specialty” fudge… “you create it and we will make it“! Our menu will have 7 flavors that we offer at ALL times for our “In house“displays and our “Ready for order“.
Today was another fun day…I got to play around with our Logo design. It is a hard decision to make! I am really loving a few of them already! I also made Maple Walnut and Zebra fudge! Yummmm!

Hi everyone! I hope it has been a fabulous day for you….Today was all about working on price list…setting a solid menu..ordering things that need to be ordered! I know that our goal was to
have an order format ready for you this week , we are still aiming for that, but I am also working out shipping charges etc…hang tight…we will get there! I am preparing all of my fudge for more sampling by local businessman. Every time I make another batch, I fall in love a little more! It is so amazing watching all of the textures come together and knowing that with every addition…I am that much closer to the final superior moment of someone taking that first bite (and I knowing it won’t be their last)! Today during my fudge making it was ALL about CHOCOMALLOW…it is one of our sweeter fudges. It turned out beautiful and fluffy! I also packaged some tonight to send to my daughters teachers. Enjoy!

A small mishap lead to an exciting addition to our menu today! It’s still to secret while I work out the kinks….details later! Also, I met a guy that came into the restaurant today that is a manager at a big resort here in Panama City beach…he tried our fudge and really liked it…he is going to set up a meeting with the right contact to see about selling my fudge there! SO EXCITING!

My friend Darla had a wonderful Halloween party! Of course we brought a huge basket of fudge with us! Lillianna, my god-daughter indulged in her fave “Chocomint“…When I say “indulge” I mean by atleast 5 pieces on top of her 10 suckers! She is adorable!
I wanted to get feedback from everyone at the party about our fudge….it was all positive! After a long night of trick or treat and playing with friends..my little 3 stooges were ready to fall over! This morning I thought for sure they would sleep in…but they didn’t AND the time changed back an hour! So I am still a little tired from the night but it sure is good thing I love what I do! I’m ready to go make lots of fudge today! We are taking pictures this week of all kinds so that YOU can see how delicious it looks, so you can order it and taste how delicious it is!
